Trudy’s Underground Barbecue
Brisket makes you really work for it. Sourcing the meat, storing it, trimming it takes hours, moving it around breaks the back, especially when moving a lot of them. Waking up at 330 am, and working on lighting a fire, and prepping and rubbing, and maintaining temperatures all day, for 16-18 hours, to maintain its resting before ever cutting into it to only to see if you wasted your time or not.
